Elevate tuna pasta with flavorful semi-dried tomatoes from the deli.
Ingredients:
  • 375g fettuccine
  • 1 medium red onion, halved, sliced
  • 200g button mushrooms, sliced
  • 180g semi-dried tomato
  • 250ml Cooking Cream
  • 425g can tuna in olive oil, drained, flaked
  • 50g baby spinach
Instructions:
  • Boil pasta in a large saucepan of salted water following package instructions until tender. Reserve 1/2 cup of cooking liquid before draining.
  • In a large, deep frying pan over medium-high heat, heat oil. Sauté onion until softened, about 2 to 3 minutes. Add mushrooms and cook until tender, about 3 to 4 minutes. Stir in tomatoes and cream, and cook until heated through, about 2 to 3 minutes. Lastly, add tuna and spinach, and cook until heated through, about 1 to 2 minutes.
  • Combine the pasta and reserved liquid with the semi-dried tomato mixture. Toss well and season with salt and pepper before serving.
