Creamy pesto and sun-dried tomato pasta bake - ready in 35 minutes.
Ingredients:
  • 250g dried elbow pasta
  • 150.00 gm basil pesto
  • 125.00 ml light thickened cream for cooking
  • 62.50 ml drained and chopped semi-dried tomatoes
  • 225g jar marinated antipasto, drained
  • 82.50 ml panko breadcrumbs
  • 82.50 ml grated parmesan
  • 20.00 ml pine nuts
  • Olive oil cooking spray
  • Shredded fresh basil leaves, to serve
Instructions:
  • Prepare the pasta according to the instructions on the package. Ensure it is well drained.
  • In a large bowl, mix together pesto and cream. Fold in pasta, tomatoes, and antipasto. Stir well to blend everything together. Season with salt and pepper to taste.
  • Preheat grill until it's nice and hot at medium-high heat.
  • Transfer the pasta mixture into a 6-cup flameproof baking dish. Mix breadcrumbs, parmesan, and pine nuts in a bowl, then sprinkle over the pasta. Lightly spray with oil and grill for 2 to 3 minutes until golden. Serve with a sprinkle of basil on top.
