Pesto, semi-dried tomato & bocconcini bruschetta

Classic bruschetta with pesto, semi-dried tomatoes, and cherry bocconcini - a fresh and flavorful appetizer.
Ingredients:
  • 80ml (1/3 cup) olive oil
  • 1 garlic clove, crushed
  • 6 slices ciabatta
  • 100g (1/2 cup) basil pesto
  • 100g semi-dried tomatoes, drained on paper towel
  • 200g cherry bocconcini, drained, halved
  • Small fresh basil leaves, to serve
  • Sea salt flakes & freshly ground black pepper
Instructions:
  • Preheat your oven to 200C. Mix 2 tablespoons of oil with garlic in a bowl. Brush both sides of ciabatta with the garlic oil and place on a baking tray. Bake for 5 minutes or until golden. Transfer to a serving platter once done.
  • Spread the ciabatta generously with flavorful pesto. Layer with juicy tomato slices and creamy bocconcini. Finish with a fragrant sprinkle of fresh basil leaves and a drizzle of the remaining oil. Season perfectly with salt and pepper and serve right away for maximum enjoyment.
