Whip up a quick and tasty spaghetti dish with fresh peas and fragrant basil pesto.
Ingredients:
  • 375g spaghetti
  • 250.00 ml frozen peas
  • 200g semi-dried tomatoes, thinly sliced
  • 198.00 gm (1/2 quantity) basil pesto (see related recipe)
  • 150g fresh ricotta, crumbled
Instructions:
  • Boil pasta in a large saucepan of salted water according to packet instructions. Add peas for the last 4 minutes of cooking time or until tender. Drain and return to the pan.
  • Combine tomato, pesto, and half of the ricotta in a pan. Season with salt and pepper, then gently toss to mix. Serve pasta topped with the rest of the ricotta.
