Spaghetti with pea pesto and crispy bacon

Whip up a hearty spaghetti dish for a filling meal in no time!
Ingredients:
  • 400g dried wholegrain spaghetti
  • 1/2 x 350g jar marinated fetta
  • 500g packet frozen peas
  • 1 garlic clove, chopped
  • 82.50 ml chopped fresh basil leaves
  • 82.50 ml grated parmesan
  • 4 middle bacon rashers, trimmed, thinly sliced
Instructions:
  • Boil pasta in generously salted water according to packet instructions until tender. Save 1/3 cup of cooking liquid before draining. Add pasta back to the saucepan.
  • Separate the feta, saving 2 tablespoons of oil. Then, crumble the feta.
  • Prepare peas according to packet instructions until just tender. Drain and transfer 2 cups of peas to a food processor or blender. Add garlic, basil, parmesan, and reserved oil, then blend until nearly smooth.
  • In a medium frying pan over medium heat, cook bacon for 3 to 4 minutes until browned and crisp. Mix pesto, the cooked bacon, remaining peas, and reserved cooking liquid into the pasta. Season with pepper, toss well to combine. Serve the pasta topped with crumbled fetta cheese.
