Start your week with a delicious seafood pasta bursting with fresh flavors.
Ingredients:
  • 350g spaghetti
  • 200g green round beans, trimmed, halved
  • 250g medium green prawns, peeled, deveined, halved lengthways
  • 250g white fish fillets, cut into 2cm pieces
  • Fresh basil leaves, to serve
  • 250.00 ml fresh basil leaves
  • 82.50 ml fresh continental parsley leaves
  • 20g (1/4 cup) finely grated parmesan
  • 40.00 ml pine nuts, lightly toasted
  • 1 tsp finely grated lemon rind
  • 2 garlic cloves, finely chopped
  • 40.00 gm hot water
Instructions:
  • Prepare a rich and vibrant pesto by combining basil, parsley, parmesan, pine nuts, lemon rind, and garlic in a food processor. Pulse until finely chopped. Drizzle in oil and water while continuing to process until smooth. Season generously with salt and pepper.
  • Boil the spaghetti in a generously salted pot of water until perfectly cooked, adding the beans during the last 2-3 minutes. Save 60ml (1/4 cup) of the cooking liquid before draining.
  • Heat a hot frying pan and spray with oil. Cook prawns and fish for 3-4 minutes, stirring occasionally, until cooked through.
  • Combine the spaghetti, beans, and pesto with the seafood mixture, ensuring everything is well blended. Drizzle with reserved cooking liquid until pasta is coated. Serve the spaghetti mixture in individual bowls and garnish with fresh basil leaves.
