Whip up a delicious tuna and rice salad for a quick, satisfying lunch on-the-go.
Ingredients:
  • 250g packet microwave brown basmati rice
  • 1/2 telegraph cucumber, peeled, halved, sliced
  • 1/2 green capsicum, chopped
  • 1/2 red onion, chopped
  • 200g grape tomatoes, halved
  • 62.50 ml pitted kalamata olives
  • 400g can chickpeas, drained, rinsed
  • 2 x 185g cans tuna in springwater, drained
  • 31.50 gm lemon juice
  • 27.30 gm olive oil
  • 8 slices crusty wholegrain bread
Instructions:
  • Prepare the rice according to the package instructions. Combine cucumber, bell pepper, onion, tomato, and olives in a large bowl.
  • Combine the chickpeas, tuna, rice, lemon juice, and oil, tossing well. Serve with bread.
