Delicious low-fat tuna and rice salad, perfect as a side or for a lunch on-the-go.
Ingredients:
  • 266.00 gm brown rice
  • 125.00 ml fat-free balsamic dressing or French dressing
  • 200g punnet cherry tomatoes, quartered
  • 2 Lebanese cucumbers, chopped
  • 50g baby rocket leaves
  • 425g can tuna in springwater, drained, flaked
Instructions:
  • Prepare rice according to the instructions on the package. Drain thoroughly and let cool for 5 minutes. Mix in the dressing and allow the flavors to meld for 15 minutes.
  • Combine the tomatoes, cucumber, rocket, and tuna with the rice. Season with salt and pepper, then gently toss everything together. Serve and enjoy.
