Whip up a quick and budget-friendly tuna rice bowl using a crunchy noodle coleslaw kit for a healthy twist!
Ingredients:
  • 300.00 gm brown rice
  • 100g snow peas, trimmed, sliced lengthways
  • 520g packet crunchy noodle coleslaw kit
  • 2 long red chillies
  • 24.00 gm sesame seeds, toasted
  • 425g can tuna in springwater, drained, flaked
  • 1 avocado, thinly sliced
  • 62.50 ml drained pickled ginger
  • 82.50 ml fresh coriander leaves
  • 2 tsp sesame oil
  • 42.00 gm salt-reduced soy sauce
Instructions:
  • Prepare the rice according to the package instructions and then transfer it to a large bowl.
  • Combine snow peas and the coleslaw kit, including the dressing, in a large bowl and mix well.
  • Finely chop 1 chili after discarding the seeds and add it to the rice along with sesame seeds. Mix well to combine, then portion out the rice mixture and coleslaw mixture into serving bowls.
  • Slice the remaining chili thinly. Arrange tuna, avocado, ginger, coriander, and chili in bowls. Season with salt and pepper. Whisk together sesame oil and soy sauce, then drizzle over bowls. Serve.
