Tuna and chickpea patties

Delight guests with flavorful tuna and chickpea patties, paired perfectly with a refreshing salad for a satisfying meal.
Ingredients:
  • 1 red onion, chopped
  • 2 x 400g cans chickpeas, drained, rinsed
  • 2 x 95g Wild Tides Tuna in Springwater
  • 187.50 ml dried breadcrumbs
  • 62.50 ml plain flour
  • 1 small red chilli, chopped
  • 62.50 ml coriander, chopped
  • 1 egg, beaten
  • 1 lemon zest, finely grated
  • Salad, to serve
  • Sweet chilli sauce, to serve
Instructions:
  • In a frying pan over medium heat, warm a tablespoon of olive oil. Sauté one chopped red onion until tender, about 2-3 minutes. Remove from heat and let cool slightly. In a separate bowl, combine 1/2 a 400g can of drained and rinsed chickpeas, one 185g can of drained and flaked tuna, 3/4 cup dried breadcrumbs, 1/4 cup plain flour, one chopped small red chili, 1/4 cup chopped coriander, one beaten egg, and the finely grated zest of one lemon.
  • First, puree 1 1/2 x 400g cans of drained and rinsed chickpeas in a food processor until smooth. Mix the pureed chickpeas into the tuna mixture and stir well to blend. Season with salt and pepper to your liking.
  • Preheat a frying pan over medium heat and lightly coat with oil. Form mixture into eight patties and refrigerate for 15 minutes, if time allows.
  • Sear patties for 3-4 minutes per side until they are beautifully crispy and golden. Place on a paper towel to drain excess oil. Serve alongside a fresh salad and a side of sweet chili sauce for a delightful meal.
