Whip up a flavorful Japanese-inspired dish with tuna and green bean sushi.
Ingredients:
  • 215g (1 cup) sushi rice
  • 375ml (1 1/2 cups) cold water
  • 40.00 ml rice wine vinegar
  • 20.00 gm caster sugar
  • 2.40 gm salt
  • 1 x 185g can tuna in oil, drained, flaked
  • 39.60 gm good-quality mayonnaise
  • 1/4 tsp wasabi paste (optional)
  • 4 nori sheets
  • 100g green beans, topped, steamed
  • Soy sauce, to serve
Instructions:
  • In a covered saucepan, bring rice and water to a boil over high heat. Reduce heat to very low and cook covered for 15 minutes, or until water is absorbed. Let it sit for 5 minutes before serving.
  • Transfer the rice to a bowl, then combine vinegar, sugar, and salt in a separate bowl. Stir until the sugar dissolves, then pour over the rice. Mix well and let it cool completely, stirring occasionally.
  • Mix the tuna, mayonnaise, and optional wasabi in a bowl.
  • Lay down a nori sheet, shiny-side down, on a clean work surface with a long side facing you. Using wet hands, evenly spread one-quarter of the rice mixture over the bottom two-thirds of the nori sheet, leaving a small border. Add 2 tablespoons of the tuna mixture down the center of the rice. Sprinkle one-quarter of the beans on top. Roll the nori sheet up to form a tight wrap. Repeat the process with the remaining ingredients.
  • Wrap each roll in plastic wrap and chill in the fridge for 30 minutes. Cut each chilled roll in half and serve with soy sauce for dipping.
