Create a vibrant green bean and radish summer salad with fresh produce.
Ingredients:
  • 150g green beans, trimmed, halved
  • 1 baby cos lettuce
  • 4 small radishes, trimmed, chopped
  • 2 hard boiled eggs, roughly chopped
  • 2 large tomatoes, roughly chopped
  • 62.50 ml pitted black olives, sliced
  • 20.00 ml chopped fresh chives
  • 36.40 gm extra-virgin olive oil
  • 21.00 gm lemon juice
Instructions:
  • For a zesty Basic Lemon Dressing, simply combine oil and lemon juice in a screwtop jar. Add a pinch of salt and a dash of pepper. Seal the jar tightly and give it a good shake to blend the flavors.
  • Boil water in a saucepan over high heat. Cook beans for 3 minutes until bright green and tender. Drain and place in chilled water, then pat dry with paper towel.
  • Prepare the lettuce by removing the outer leaves and core, then separate the leaves. Wash them and gently pat dry with a tea towel before roughly chopping. Combine the lettuce with beans, radish, egg, tomato, olives, and chives in a bowl. Drizzle with dressing, toss everything together, and serve.
