Green bean and ripe tomato side salad.
Ingredients:
  • 500g green beans, topped, diagonally sliced
  • 60mls (1/4 cup) olive oil
  • 1 lemon, rind finely grated, juiced
  • 11.80 gm Dijon mustard
  • 2 garlic cloves, crushed
  • Salt & ground black pepper, to taste
  • 4 medium ripe tomatoes, chopped
  • 125.00 ml chopped fresh continental parsley
Instructions:
  • Boil water in a saucepan. Cook beans for 2 minutes until bright green and tender crisp. Rinse under cold water, then place in a bowl.
  • In a small jug, combine olive oil, lemon rind, lemon juice, Dijon mustard, garlic, salt, and pepper. Whisk vigorously with a fork until well combined. Taste and adjust seasonings to your liking.
  • Combine the dressing, tomatoes, and parsley with the beans, ensuring they are well mixed. Serve promptly.
