Try this tasty cannellini bean and tomato salad with herby vinaigrette for your next BBQ!
Ingredients:
  • 1 x 400g can cannellini beans, rinsed, drained
  • 1 x 250g punnet cherry tomatoes, halved
  • 1 bunch fresh continental parsley, washed, leaves picked
  • 1/2 small red onion, cut into thin wedges
  • 40.00 ml red wine vinegar
  • 9.20 gm extra virgin olive oil
  • Salt & freshly ground black pepper
Instructions:
  • Combine cannellini beans, tomato, parsley, and onion in a large bowl, gently toss together.
  • In a small jug, blend vinegar, oil, and garlic until thoroughly mixed. Season with salt and pepper to taste. Drizzle dressing over the cannellini bean mixture, toss well, and serve promptly.
