Prawn & cannellini bean salad

Impress guests in minutes with this quick and refreshing summer salad.
Ingredients:
  • 2 x 420g cans cannellini beans, rinsed, drained
  • 1kg cooked prawns, peeled
  • 2 ripe avocados, halved, stones removed, peeled, coarsely chopped
  • 250.00 ml fresh continental parsley leaves, coarsely torn
  • 80ml (1/3 cup) fresh lemon juice
  • 1 garlic clove, crushed
  • Salt & freshly ground black pepper
Instructions:
  • In a large serving bowl, mix together the cannellini beans, prawns, avocado, and parsley. Cover with plastic wrap and chill in the fridge until needed.
  • Combine the oil, lemon juice, and garlic in a small bowl, whisking until well blended. Season with salt and pepper to taste.
  • Drizzle dressing over the salad, gently toss to combine, and serve right away.
