Delicious prawn and cannellini bruschetta.
Ingredients:
  • 20 cooked prawns, peeled (tails intact), deveined
  • 800g canned cannellini beans, rinsed, drained
  • 2 small tomatoes, cut into wedges
  • 40.00 ml baby capers, rinsed, drained
  • 250.00 ml small basil leaves
  • 8 slices organic sourdough bread, grilled
  • 60ml lemon juice
  • 18.20 gm olive oil
  • 40.00 ml finely chopped basil leaves
Instructions:
  • Combine freshly squeezed lemon juice, high-quality olive oil, and fragrant chopped basil in a bowl, whisking until fully blended to create the flavorful lemon basil dressing.
  • Combine prawns, cannellini beans, tomato wedges, capers, and basil in a large bowl. Drizzle with lemon basil dressing and toss together.
  • Present the prawn salad atop grilled organic bread slices.
