Ingredients:
  • 18.20 gm olive oil
  • 1kg green prawns, peeled, deveined
  • 3 garlic cloves, crushed
  • 1 bunch fresh rocket, trimmed
  • 420g can chickpeas, rinsed, drained
  • 2 ripe saladette tomatoes, halved, deseeded, sliced
  • 1 tsp grated lemon rind
  • 1 ripe avocado, halved, peeled, chopped
  • 110ml container Caesar dressing
Instructions:
  • In a large frying pan over medium-high heat, sizzle the prawns and garlic in hot oil until the prawns turn pink and are fully cooked, about 2-3 minutes. Remove from the pan onto a plate and let them cool slightly.
  • In a serving bowl, mix rocket leaves, chickpeas, tomatoes, and lemon rind. Add prawns and avocado, gently toss to combine. Drizzle with dressing before serving.
