Ingredients:
  • 800g large green tiger prawns, peeled leaving tails intact, deveined
  • 3 garlic cloves, finely chopped
  • 1 lemon
  • 375g linguine
  • 2 long fresh red chilli, seeded, thinly sliced
  • 125.00 ml flat-leaf parsley leaves
  • 80g baby rocket leaves
Instructions:
  • Mix together the prawns, garlic, and 1 tablespoon of oil in a large bowl. Cover with plastic wrap and allow to sit for 15 minutes to enhance the flavors.
  • Zest the lemon using a zester or a vegetable peeler, making sure to only get the outer zest and avoid the white pith. Then, juice the lemon.
  • Prepare the pasta in a generous pot of salted boiling water as per the instructions on the package until it's al dente. Ensure to drain it thoroughly.
  • Heat a large frying pan over high heat. Cook prawn mixture for 5 minutes until prawns change color. Stir in chilli and lemon rind, cook for 1 more minute. Remove from heat and add pasta, parsley, rocket, lemon juice, and remaining oil. Season with salt and pepper, gently toss to combine. Serve immediately in serving bowls.
