Get creative with affordable and versatile prawns for a delicious meal option.
Ingredients:
  • 4 middle bacon rashers
  • 32cm loaf sourdough bread, cut into 12 slices, toasted
  • 61.88 gm aioli
  • 2 medium tomatoes, sliced
  • 1 large avocado, sliced
  • 750g medium cooked tiger prawns, peeled, deveined
  • 50g baby rocket
  • Shoestring fries, to serve
Instructions:
  • - Preheat a non-stick frying pan over medium-high heat. - Add bacon and cook for 6 to 8 minutes, turning occasionally until crisp. - Transfer to a plate lined with paper towel and let it cool for 2 minutes before serving.
  • Start by placing the toast on a chopping board. Spread aioli on one side of each piece of toast. Top 4 pieces with a layer of tomato, avocado, and prawns. Place another piece of toast on top, aioli side up. Top each with rocket, bacon, tomato, avocado, and prawns. Season with salt and pepper, then place the remaining toast on top, aioli side down. Cut each sandwich in half and serve with fries.
