Ingredients:
  • 62.50 ml mint leaves
  • 60.00 ml (1/4 cup) toasted pine nuts
  • 125ml olive oil
  • 500g medium green prawns, peeled, de-veined, tails intact
  • 42.00 gm lemon juice
  • 100g mixed salad leaves
  • 425g can cannellini beans
Instructions:
  • Combine fresh mint leaves and 2 tablespoons of pine nuts in a food processor along with 2 tablespoons of warm water and 1/3 cup (80ml) of olive oil. Blend until creamy, then transfer to a bowl and season with salt and pepper to taste.
  • Coat prawns in 1 tablespoon of oil and season with salt and pepper. Sear in a hot frypan for about 1 minute per side until cooked through.
  • Combine the leftover oil and lemon juice, then add salt and pepper for seasoning. Coat the leaves in the dressing and arrange them on plates. In a separate bowl, mix prawns, beans, and mint oil, then place on top of the leaves. Sprinkle with the remaining pine nuts for garnish before serving.
