Braised broad beans

Bright broad bean and tomato salad, perfect side dish.
Ingredients:
  • 500g packet frozen broad beans
  • 1 small red onion, finely chopped
  • 1 garlic clove, crushed
  • 2 roma tomatoes, finely chopped
  • 20.00 ml finely chopped fresh flat-leaf parsley leaves
Instructions:
  • Place fresh broad beans in a heatproof bowl and cover them with boiling water. Let them sit for 2 minutes to loosen the skins. Drain the beans, then simply peel off and discard the skins.
  • In a medium frying pan, heat oil over medium heat. Add onion and garlic and sauté for 5 minutes until softened, stirring occasionally.
  • Combine the broad beans and tomato in the pan. Cook for 5 minutes, stirring occasionally, until heated through. Add parsley, then serve.
