Delicious gluten-free and dairy-free almond flour waffles, light and crispy, perfect for a family brunch with maple syrup.
Ingredients:
  • 1 1/2 cups almond flour or almond meal
  • 1/2 cup tapioca flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • Pinch of salt
  • 3 tablespoons sugar
  • 3 large eggs
  • 3 tablespoons coconut oil, warmed to liquid state
  • 1 cup almond milk, room temperature
  • 1 teaspoon almond extract
Instructions:
  • Preheat your waffle maker until hot enough that a flick of water evaporates on contact, for 5 to 10 minutes. Keep warm in the oven at 250°F.
  • Prepare the waffle batter by combining the dry ingredients in one bowl and mixing the wet ingredients in another bowl. Then, pour the wet mixture into the dry mixture and whisk until well combined.
  • Let the batter rest for 5 minutes to allow the flour to absorb the liquid fully.
  • Prepare the waffle maker by greasing it, then follow the manufacturer's instructions to cook the waffles. Keep the finished waffles warm and slightly crispy by placing them in the oven for 5 to 10 minutes. Serve promptly.
