Indulge in guilt-free almond flour pancakes with a luscious coconut butter-cinnamon glaze.
Ingredients:
  • 0.5 cup almond flour
  • 3 large eggs
  • 0.25 cup milk, or more as needed
  • 2 tablespoons coconut flour
  • 1 tablespoon white sugar, or more to taste
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon baking powder
  • 1 tablespoon vegetable oil, or as needed
  • 1.5 tablespoons coconut butter, melted
  • 1 tablespoon milk, or as needed
Instructions:
  • In an electric blender, mix almond flour, eggs, milk, coconut flour, sugar, cinnamon, and baking powder until a thick batter forms. Allow it to rest for 5 to 10 minutes. Adjust consistency by adding more milk if needed.
  • Start by coating a pan with oil and warming it on medium-low heat. Spoon the batter onto the pan and cover it. Cook until bubbles appear on the edges, about 2 to 3 minutes. Flip the pancake and cook until golden, another 2 to 3 minutes. Repeat with the rest of the batter.
  • Create a flavorful glaze by blending melted coconut butter with cinnamon, then enrich it with milk before generously drizzling over your pancakes.
