Delicious gluten-free cinnamon rolls with almond butter and flour, irresistibly sweet and gooey.
Ingredients:
  • 0.25 cup warm water
  • 1 tablespoon sugar
  • 1 (.25 ounce) package active dry yeast
  • 1 cup Blue Diamond Almond Flour
  • 3.25 cups gluten-free flour blend
  • 2 large eggs
  • 6 tablespoons butter, melted
  • 0.75 cup milk
  • 0.5 cup sugar
  • 1 teaspoon vanilla
  • 0.25 cup butter
  • 0.33333334326744 cup almond butter
  • 0.25 cup sugar
  • 0.5 cup brown sugar
  • 2 tablespoons ground cinnamon
  • 0.5 cup butter, softened
  • 0.5 cup powdered sugar
  • 0.25 cup cream cheese
  • 1 pinch salt
  • 1 tablespoon Blue Diamond Almond Breeze Vanilla Almond Milk
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) for perfect cooking temperature.
  • Microwave water until it reaches 110°F (43°C). Stir in 1 tablespoon of sugar and yeast. Allow the mixture to proof for 5 to 10 minutes until it bubbles and foams.
  • Place dry ingredients in a food processor and pulse for 30 seconds until thoroughly combined.
  • Once the yeast is activated, combine eggs, butter, milk, sugar, and vanilla. Mix gently and gradually incorporate flour mixture, adding 1 cup at a time. Increase mixer speed to medium-high and beat for 2 minutes until the dough becomes less sticky.
  • Line a large cutting board or baking sheet with plastic wrap and sprinkle with gluten-free flour blend. Ensure the wrap is tightly secured. Transfer the dough onto the wrap, sprinkle with additional flour blend, cover with another layer of plastic wrap, and roll it into a large rectangle. Carefully remove the top layer of plastic wrap.
  • Mix together butter and almond butter until melted. Spread the mixture over the dough. Sprinkle sugar, brown sugar, and cinnamon evenly on top. Roll the dough starting from the smaller side, using plastic wrap to help keep it tight as you roll.
  • Slice the roll into 8 even pieces using a serrated knife.
  • Place the cut-side down rolls in a buttered pie plate or cast iron skillet. Allow them to sit covered for 15 minutes.
  • Bake until golden brown, about 25 minutes.
  • As the rolls bake, cream together the frosting ingredients in a mixing bowl on high speed for approximately 3 minutes until smooth.
  • As soon as the rolls come out of the oven, generously drizzle them with frosting and serve warm.
