Tender and Juicy Instant Pot Pork Tenderloin

Zero-minute seared pork tenderloin in Instant Pot, cooks effortlessly during pressure build and release.
Ingredients:
  • 1 cup hot water
  • 0.5 cube tomato bouillon with chicken flavoring (such as Knorr®)
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon kosher salt
  • 0.5 teaspoon cayenne pepper
  • 1 (1 pound) pork tenderloin
  • 2 tablespoons olive oil
  • 2 large cloves garlic, smashed
  • aluminum foil
  • 1 tablespoon cornstarch
Instructions:
  • Combine hot water and tomato bouillon in a small bowl, stirring until fully dissolved.
  • Combine garlic powder, oregano, thyme, salt, and cayenne pepper in a small bowl. Massage the seasoning onto the pork tenderloin until fully coated.
  • Heat olive oil in a multi-functional pressure cooker on Saute mode until shimmering, about 3 to 5 minutes. Add smashed garlic and cook until fragrant and oil is infused with garlic flavor, about 1 to 2 minutes. Transfer garlic to a small bowl.
  • Sear pork tenderloin in the pot for 2 minutes per side until beautifully browned. Pour in tomato bouillon, bring it to a boil, and deglaze the pan with a wooden spoon to release all the flavorful pork bits. Return garlic cloves to the pot.
  • Secure the lid and activate the high pressure setting as per the manufacturer's directions. Set the timer for 0 minutes and give it 10 to 15 minutes for the pressure to build up.
  • Follow the manufacturer's instructions to naturally release pressure for about 10 minutes. Unlock and remove the lid once the pressure pin drops. Carefully lift out the tenderloin and cover with 2 layers of aluminum foil. Let it rest for 3 minutes before slicing. The pork should be slightly pink in the center and reach an internal temperature of at least 145°F (63°C).
  • Combine cold water and cornstarch in a small bowl to create a slurry. Pour the slurry into the Instant Pot, then choose the Saute function and let it simmer until the sauce thickens, approximately 3 minutes. Finish by drizzling the sauce over the sliced pork.
