Instant Pot chicken breasts cooked until juicy and tender, then crispy under the broiler for perfection.
Ingredients:
  • 2 bone-in, skin-on chicken breasts (about 2 pounds total)
  • 1 tablespoon Cajun seasoning, or more to taste
  • salt and freshly ground black pepper to taste
  • 1 cup chicken broth
Instructions:
  • Season chicken breasts generously with aromatic Cajun seasoning, salt, and pepper for a burst of flavorful goodness.
  • Place a trivet in your multi-functional pressure cooker, pour in chicken broth, and add chicken breasts. Seal the lid, set to high pressure for 10 minutes following the manufacturer's instructions, and allow pressure to build for 10 to 15 minutes.
  • Follow the natural-release method for about 10 minutes as per manufacturer's instructions. Then, perform the quick-release method for about 5 minutes. Unlock and remove the lid carefully.
  • Position an oven rack 6 inches from the heat source and preheat the broiler.
  • Transfer the cooked chicken breasts onto a baking sheet and broil until the skin is beautifully browned, approximately 4 minutes.
