Ingredients:
  • 2 tablespoons butter
  • 1 onion, diced
  • 3 stalks celery, diced
  • 0.5 teaspoon dried thyme
  • 3 carrots, chopped
  • 6 slices bacon, chopped
  • 4 cloves garlic, minced
  • 0.25 teaspoon ground black pepper
  • 6 cups chicken broth
  • 1 pound green split peas, rinsed and sorted
Instructions:
  • Begin by heating up a multi-functional pressure cooker like an Instant Pot using the Saute function. Once warm, add butter and olive oil followed by onion, celery, bay leaves, and thyme. Stir occasionally and cook until the onion becomes translucent, approximately 5 minutes.
  • Combine the carrots, bacon, garlic, salt, and pepper in the pot and sauté for about 1 minute until fragrant. Pour in the broth and bring it to a simmer. Stir in the split peas, then seal the lid with the release knob set to Sealing position.
  • Follow manufacturer's instructions to select Manual/Pressure Cook setting, then set timer for 18 minutes. Let pressure build for 10-15 minutes before proceeding.
  • Follow the manufacturer's natural-release method for 15 minutes. Then, turn the steam release knob to Venting and use the quick-release function to release any remaining pressure. Open the lid carefully, discard the bay leaves, and adjust seasonings to taste.
