Tender Instant Pot orange chicken with juicy thighs - quick, easy, and delicious.
Ingredients:
  • 2 pounds boneless, skinless chicken thighs, or more to taste
  • 0.5 cup orange juice
  • 0.5 cup lemon juice
  • 0.25 cup low-sodium soy sauce
  • 0.25 cup diced green onions
  • 2 large oranges, zested
  • 2 teaspoons minced fresh ginger
  • 2 teaspoons minced garlic
  • 2 teaspoons Sriracha sauce
  • 2 tablespoons vegetable oil
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 1 cup brown sugar, or more to taste
  • 6 tablespoons cornstarch
  • 6 tablespoons water
Instructions:
  • Pat dry the chicken thighs with a paper towel to remove any excess moisture, then use kitchen shears to trim off any unwanted fat. Proceed by cutting the chicken into bite-sized chunks.
  • Combine the orange juice, lemon juice, soy sauce, green onions, orange zest, ginger, garlic, and Sriracha in a bowl and mix well.
  • Preheat your Instant Pot on Saute mode. Once hot, swirl in the oil, then add chicken, salt, and pepper. Sear for 2 minutes, then stop Saute mode.
  • Pour the orange sauce mixture into the Instant Pot, close and lock the lid. Select high pressure for 4 minutes following the manufacturer's instructions. Let the pressure build for 10 to 15 minutes.
  • Follow the manufacturer's instructions to release pressure naturally for 5 minutes, then switch to the quick-release method for another 5 minutes. Unlock and remove the lid.
  • Switch the Instant Pot to Saute mode and incorporate the brown sugar into the mixture.
  • Combine cornstarch with water, stir well, and add the slurry to the Instant Pot. Cook until the sauce thickens, for 2 to 3 minutes.
