Chaffles with Almond Flour

Low-carb chaffles: almond flour, egg, mozzarella waffles - cheesy & versatile for breakfast or sandwiches!
Ingredients:
  • 1 large egg
  • 1 tablespoon blanched almond flour
  • 0.25 teaspoon baking powder
  • 0.5 cup shredded mozzarella cheese
Instructions:
  • Combine the egg, almond flour, and baking powder in a bowl and whisk until smooth. Fold in the mozzarella cheese and allow the batter to rest.
  • Preheat the waffle iron as directed by the manufacturer.
  • Grease the hot waffle iron with cooking spray. Pour half of the batter onto the iron, spreading it from the center with a spoon. Close the waffle maker and cook for about 3 minutes until desired doneness. Gently remove the chaffle and repeat with the rest of the batter. Let chaffles cool and crisp up for 2 to 3 minutes.
