Indulge in a satisfying low carb bagel chaffle with everything seasoning for a guilt-free delight on the keto diet.
Ingredients:
  • 1 large egg
  • 3 teaspoons everything bagel seasoning, divided
  • 1 teaspoon coconut flour
  • 0.25 teaspoon baking powder
  • 0.5 cup shredded mozzarella cheese
  • 4 tablespoons smoked salmon cream cheese spread (such as Philadelphia®)
  • 1 teaspoon capers, drained
  • 3 thin red onion slices
Instructions:
  • Preheat the waffle maker following the manufacturer's guidelines.
  • In a small bowl, combine whisked egg, 2 teaspoons bagel seasoning, coconut flour, and baking powder. Gently fold in the mozzarella cheese.
  • Spread half of the batter onto the waffle maker using a spoon from the center outwards. Cook until the chaffle reaches your preferred doneness and the waffle maker stops steaming, for about 3 to 4 minutes.
  • Take out the chaffle from the waffle maker and transfer it to a cooling rack. Make more chaffles with the remaining batter. Let them cool for a few minutes to become crispy.
  • Evenly spread the salmon cream cheese on each chaffle, then top with remaining bagel seasoning, capers, and red onion. Use a sharp knife to cut out a circle from the center of the chaffle or a 1 1/2-inch round cookie cutter for a more authentic and playful look.
