Savory everything bagel chicken casserole with artichoke spinach dip, orzo, and crunchy topping - easy prep, big flavor, ultimate comfort.
Ingredients:
  • 1 cup orzo
  • 1 1/2 cups chicken broth
  • 1/2 cup spinach artichoke dip, or more to taste
  • 2 garlic cloves, minced
  • Pinch crushed red pepper flakes
  • 1 pound boneless skinless chicken, cubed
  • 1/2 teaspoons Italian seasoning
  • 2 tablespoons panko bread crumbs
  • 1/3 cup shredded mozzarella cheese
  • 2 teaspoons everything bagel seasoning
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and generously coat a 12x8-inch casserole dish with cooking spray.
  • Combine orzo with chicken broth in the casserole dish. Mix in spinach artichoke dip, minced garlic, and crushed red pepper flakes, stirring well.
  • Season the chicken generously with salt and aromatic Italian seasoning. Arrange the chicken in the casserole dish and tightly cover with aluminum foil before cooking.
  • Roast in the preheated oven until the orzo is al dente and the chicken is cooked through, about 45 minutes. Insert an instant-read thermometer near the center of the chicken; it should register at least 165 degrees F (74 degrees C).
  • Take the casserole out of the oven, uncover it, and evenly sprinkle with panko, mozzarella cheese, and bagel seasoning.
  • Preheat the broiler with the oven rack positioned 6 inches from the heat source. Broil the casserole until the topping turns golden for about 5 minutes. Serve hot.
