Delicious pumpkin chaffles topped with low-carb whipped cream, perfect for breakfast or brunch.
Ingredients:
  • 0.25 cup pumpkin puree
  • 1 teaspoon maple extract
  • 1 tablespoon almond flour
  • 0.75 teaspoon pumpkin pie spice
  • 0.25 teaspoon baking powder
  • 0.25 cup heavy cream
  • 0.5 teaspoon granulated erythritol sweetener (such as Swerve®)
  • 0.25 teaspoon maple extract
  • 1 pinch ground cinnamon
Instructions:
  • Preheat waffle maker following manufacturer's guidelines.
  • Combine pumpkin puree, egg, and maple extract in a small bowl, whisk until smooth. Add mozzarella cheese, almond flour, pumpkin pie spice, and baking powder, stir until well mixed.
  • Spread half of the batter onto the heated waffle maker using a spoon from the center outwards (avoid overfilling). Cook until steam stops and the chaffle is cooked to your liking, about 3-4 minutes. Take out the chaffle from the waffle maker and repeat with the rest of the batter. Let it cool for a few minutes as you make the whipped cream.
  • In a small bowl, whisk heavy cream using an electric mixer on high speed until soft peaks form in 1 to 2 minutes. Then, switch to medium speed, incorporate sweetener and maple extract, and continue whipping until stiff peaks form.
  • Place a chaffle on a plate, top it with a generous dollop of whipped cream, and finish with a sprinkle of cinnamon before serving.
