Decadent chocolate-coconut slices topped with creamy ganache and a white chocolate Easter egg.
Ingredients:
  • 150g butter, melted, cooled
  • 180.00 gm firmly packed brown sugar
  • 1 egg, lightly beaten
  • 4.40 gm vanilla extract
  • 125.00 ml plain flour
  • 49.50 gm self-raising flour
  • 32.50 gm cocoa powder
  • 42.50 gm desiccated coconut
  • 130g packet white chocolate Easter eggs, foil removed
  • 200g block milk chocolate, chopped
  • 83.33 gm thickened cream
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced. Grease a 20cm x 30cm lamington pan and line it with baking paper, leaving a 2cm overhang on the long sides.
  • In a large bowl, combine butter, sugar, egg, and vanilla. Mix until well incorporated. Sift in flours and cocoa, then add coconut. Stir until evenly mixed. Transfer the mixture to the prepared pan and bake for 25 to 30 minutes or until set. Allow it to cool completely in the pan before serving.
  • Prepare the Chocolate ganache: Place the chocolate and cream in a heatproof bowl. Microwave on medium-high (75%) for 2 minutes, stirring every 30 seconds with a metal spoon until smooth. Pour the ganache evenly over the chilled base.
  • Gently press the Easter eggs into the ganache and chill for 20 minutes until firm. Slice into squares and enjoy!
