Baklava-inspired pinwheel cookies bursting with walnuts, honey, and cinnamon - perfect for pairing with your favorite coffee or cappuccino.
Ingredients:
  • 1 cup sugar
  • 1 large egg
  • 0.25 teaspoon vanilla extract
  • 0.25 teaspoon almond extract
  • 1.75 cups all-purpose flour
  • 0.5 teaspoon baking soda
  • 0.125 teaspoon salt
  • 1.5 cups walnuts
  • 0.66666668653488 cup honey
  • 1 teaspoon cinnamon
Instructions:
  • In a large bowl, use an electric mixer to cream together butter and sugar until light and fluffy. Mix in egg, vanilla extract, and almond extract. Add flour, baking soda, and salt, then beat until well combined. Shape the dough into a disk, wrap it in plastic, and refrigerate for 2 hours until firm enough to roll.
  • Pulse walnuts in a food processor until finely chopped. Heat honey and cinnamon in a saucepan until honey is liquefied and cinnamon is mixed in. Add walnuts and cook for 1 minute. Cool before serving.
  • Take the dough out of the refrigerator and roll it out on a lightly floured surface into a 13x10-inch rectangle. Spread the honey-walnut mixture evenly over the dough, leaving a 1/2-inch border around the edges.
  • Roll the dough tightly from the long side to form a log, jelly-roll style. Wrap in plastic wrap and refrigerate until firm, approximately 1 hour.
  • Preheat the oven to 350°F (175°C) and prepare 2 baking sheets with parchment paper or silicone mats.
  • Take the dough out of the package and slice it into 1/4-inch pieces. Arrange the slices on the baking sheets with 2 inches of space between each slice, cut-side facing down.
  • Bake in the preheated oven for 12 to 15 minutes until edges are golden brown. Transfer cookies to a cooling rack and allow them to cool completely.
