Create elegant spiraled butter cookie pinwheels with vibrant red and green hues, perfect for the holidays. Also try a decadent chocolate-vanilla twist on this classic treat.
Ingredients:
  • 4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.25 teaspoon baking soda
  • 1.3333333730698 cups butter
  • 1 cup packed brown sugar
  • 0.66666668653488 cup white sugar
  • 2 eggs, beaten
  • 1.5 teaspoons vanilla extract
  • 1 drop red food coloring, or as needed
  • 1 drop green food coloring, or as needed
Instructions:
  • Double sift the flour, baking powder, baking soda, and salt into a bowl for extra lightness and smoother texture.
  • Cream together the butter, brown sugar, and white sugar until light and fluffy in a mixing bowl. Mix in the eggs and vanilla until smooth. Gradually incorporate the flour mixture until well combined. Separate the dough into two equal parts. Transfer one portion to a separate bowl. Mix red food coloring into one half and green food coloring into the other half. Stir with a fork or wooden spoon until the color is evenly distributed. Adjust the color with additional drops as needed.
  • Roll out the red dough to 1/4 inch (5mm) thickness. Then, do the same with the green dough. Place the green dough on top of the red one. Roll the doughs together to create a colorful spiral log. Wrap the log in waxed paper, then in a cotton towel, and refrigerate for at least 8 hours.
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and give 2 baking sheets a gentle grease.
  • Unwrap the dough log and carefully place it on a clean, lightly floured surface. Slice the log into 1/8 inch (3 mm) rounds and arrange them on the baking sheets.
  • Place in a preheated oven and bake for 5 to 6 minutes until set, avoiding browning of the edges. Remove from oven and allow to cool on racks.
