Festive date-nut balls with pecans, crispy rice cereal - perfect for holiday cookie tins.
Ingredients:
  • 14 tablespoons butter
  • 1 cup pitted chopped dates
  • 1 cup white sugar
  • 2 cups crispy rice cereal (such as Rice Krispies®)
  • 1 cup chopped pecans
  • 2 tablespoons confectioners' sugar, or as needed
Instructions:
  • In a saucepan over medium heat, gently melt butter. Stir in dates and white sugar until the mixture thickens and turns golden brown, about 10 to 15 minutes. Take the saucepan off the heat.
  • Combine the crunchy rice cereal and rich pecans with the warm date mixture. Allow it to cool until you can easily work with it, usually 5 to 10 minutes.
  • Shape mixture into petite, round balls using your hands.
  • Place confectioners' sugar in a resealable plastic bag, along with the date-nut balls. Seal the bag and shake gently until the balls are well-coated.
