Decadent date bread with your favorite nuts for texture and flavor.
Ingredients:
  • 1.5 cups dates, pitted and chopped
  • 2.25 cups boiling water
  • 3 teaspoons baking soda
  • 1 cup chopped walnuts
  • 2 cups white sugar
  • 3 tablespoons margarine
  • 2 eggs, beaten
  • 1 teaspoon salt
  • 4.5 cups all-purpose flour
Instructions:
  • Mix the baking soda with the boiling water and let the dates soak in the solution for 30 minutes.
  • Combine sugar and butter until creamy. Mix in eggs, vanilla, dates with soaking liquid, nuts, flour, and salt.
  • Pour the batter evenly into two greased 9x5-inch (or three 8 1/2x4 1/2-inch) loaf pans. Bake at 300 degrees F (150 degrees C) for about 1 hour or until a toothpick comes out clean when tested. Once cooled, it can be frozen.
