Delicious date-nut bread complemented with a citrus burst from fresh orange juice and zest.
Ingredients:
  • 1 large egg
  • 2 tablespoons butter, softened
  • 1 cup white sugar
  • 0.67 cup fresh orange juice
  • 0.33 cup boiling water
  • 3 tablespoons grated orange zest
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 0.75 teaspoon salt
  • 0.5 cup chopped walnuts
  • 1 cup dates, pitted and chopped
Instructions:
  • Preheat the oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  • Mix together fresh orange juice, water, and fragrant orange zest in a liquid measuring cup.
  • In a bowl, gently beat the egg. Mix in the butter and sugar until smooth. Add the orange juice mixture and stir until well combined.
  • In a separate bowl, mix together flour, baking powder, baking soda, and salt. Add walnuts and dates to the mixture. Pour the batter into the loaf pan and stir until moistened. Spoon the mixture into the prepared loaf pan.
  • Bake in the oven until a toothpick inserted comes out clean, approximately 1 hour. Let it cool in the pan for 10 minutes, then transfer to a wire rack to finish cooling.
