Delicious cherry cake with a citrusy syrup drizzle.
Ingredients:
  • 125g butter or margarine
  • 250g sugar
  • 2 extra large eggs
  • 500g plain flour
  • 4.00 gm baking powder
  • 2.50 gm bicarbonate of soda
  • 100g red glace cherries, quartered
  • 125g pitted dates, chopped
  • 200ml natural yoghurt or sour milk
  • 200ml orange juice
  • 5g grated orange rind
  • 200g sugar
Instructions:
  • Combine the butter and sugar until creamy, then add eggs one at a time, beating until light and fluffy.
  • Sift together flour, salt, baking powder, and bicarbonate of soda. Mix into the egg mixture. Gently fold in the fruit.
  • Mix the yoghurt into the batter until well combined, then transfer the mixture into a greased loaf or ring cake tin. Bake in a preheated oven at 180°C for 35-45 minutes until golden brown.
  • Make syrup by placing all ingredients in a small saucepan and simmering for 5 minutes. Then, drizzle the warm syrup over the cake.
