Delicious energy balls made with dried fruits, nuts, and seeds, perfect for snacking or coffee pairing.
Ingredients:
  • 100g walnut
  • 100g cashew
  • 100g blanched almonds, chopped
  • 50g oats
  • 100g dried apricot
  • 150g pitted dates, chopped
  • 100g prune
  • 24.00 gm sesame seeds
  • 20.00 gm cocoa powder
  • 2.50 gm ground cinnamon
  • 90g desiccated coconut
Instructions:
  • Toast the walnuts, cashews, and almonds in a dry frypan over medium-low heat for 2-3 minutes, stirring occasionally, until lightly toasted. Transfer to a food processor and pulse until finely chopped.
  • Combine oats, apricots, dates, prunes, sesame seeds, cocoa, cinnamon, and honey in a food processor. Pulse for 2-3 minutes until a smooth paste forms.
  • Form the mixture into 50g portions, roughly the size of a golf ball, by rolling between damp hands to yield approximately 15 balls.
  • Roll the balls in coconut until coated, then serve. Store the beach balls in an airtight container for up to 2 weeks.
