Mini spiced date and hazelnut loaves

Bake mini fruit and nut loaves for delicious homemade gifts.
Ingredients:
  • 375.00 ml pitted dried dates, chopped
  • 125.00 ml pitted prunes, chopped
  • 2.50 gm bicarbonate of soda
  • 100g butter, softened
  • 135.00 gm firmly packed brown sugar
  • 312.50 ml plain flour
  • 5.00 gm ground ginger
  • 2.50 gm mixed spice
  • 82.50 ml dry-roasted hazelnuts, finely chopped
Instructions:
  • Preheat the oven to 180C/160C fan-forced and generously grease an 8-hole, 3/4 cup-capacity mini loaf pan.
  • In a saucepan, combine dates, prunes, and 1 cup of water. Bring to a boil over medium-high heat, then remove from heat. Stir in bicarbonate of soda and blend the mixture until nearly smooth. Allow it to cool before using.
  • Cream butter and sugar with an electric mixer until light and fluffy. Add eggs one at a time, beating well after each addition. Mix in date mixture, flour, ginger, and mixed spice. Spoon batter into prepared holes, then sprinkle with hazelnuts and press lightly into the batter.
  • Bake for 25-30 minutes until a skewer inserted in the center of a cake comes out clean. Allow cakes to rest in the pan for 5 minutes before transferring to a wire rack to cool.
