Spiced mini muffins with raisins - reminiscent of a classic apple cake.
Ingredients:
  • 0.75 cup SPLENDA® No Calorie Sweetener, Granulated
  • 1 cup butter, softened
  • 2 teaspoons molasses
  • 2 large eggs
  • 0.33333334326744 cup apple juice concentrate, thawed
  • 2 teaspoons grated fresh lemon peel
  • 2 cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 cup peeled, shredded fresh apple
  • 0.66666668653488 cup old-fashioned oats
  • 0.5 cup raisins
Instructions:
  • Preheat your oven to 400 degrees F, and lightly coat miniature muffin pans with vegetable cooking spray; set them aside.
  • In an electric mixer, combine SPLENDA® Granulated Sweetener, butter, and molasses. Beat on medium speed for 1 minute until blended. Add eggs one at a time, beating until each addition is blended. Mix in apple juice concentrate and lemon peel until well combined.
  • Mix together flour, cinnamon, nutmeg, baking soda, and salt. Blend into the SPLENDA® Granulated Sweetener mixture on low speed until just combined. Gently fold in apple, oats, and raisins.
  • Fill prepared pans three-fourths full with batter. Bake for 12 minutes or until edges are lightly browned. Cool on wire racks.
