Fragrant spiced pumpkin mini loaves with pecans and raisins. Ideal for Thanksgiving sharing.
Ingredients:
  • 3 cups Gold Medal™ all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1 cup chopped pecans, toasted
  • 3/4 cup golden raisins
  • 3/4 cup unsalted butter, softened
  • 3 cups sugar
  • 3 eggs
  • 2 cups canned pumpkin (not pumpkin pie mix)
  • 1 teaspoon vanilla
Instructions:
  • Preheat oven to 325°F. Grease and lightly flour 12 (5x3-inch) loaf pans with shortening.
  • In a medium bowl, combine flour, baking powder, baking soda, salt, cinnamon, cloves, and nutmeg. Add pecans and raisins, then mix well to ensure even coating. Set aside for later use.
  • In a large bowl, use an electric mixer to cream the butter until creamy. Gradually add sugar and beat well. Add eggs one at a time, beating until combined. Mix in flour mixture and pumpkin alternately on low speed. Stir in vanilla and divide the batter among loaf pans.
  • Bake for 45 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer to cooling racks to cool completely.
