Flourless pumpkin mini muffins with oats and Greek yogurt - a delicious and portable snack for kids.
Ingredients:
  • 2.5 cups oats
  • 1.5 cups pumpkin puree
  • 1 cup fat-free Greek yogurt
  • 0.75 cup white sugar
  • 2 eggs
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon pumpkin pie spice
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and generously coat a mini muffin tin with cooking spray in all 18 cups.
  • In a food processor, blend oats, pumpkin puree, yogurt, sugar, eggs, baking powder, baking soda, cinnamon, and pumpkin pie spice until well combined and oats are slightly coarse. Use a 2-teaspoon scoop to fill each muffin cup with the batter.
  • Bake in the preheated oven for approximately 23 minutes until the tops spring back when lightly pressed. Allow to cool in the tins for 5 minutes, then transfer to a wire rack to cool completely.
