Valentine's Day treat: Indulgent, spicy ginger molten cakes for two.
Ingredients:
  • 1 cup powdered sugar
  • 4 (1 ounce) squares semisweet baking chocolate
  • 0.5 cup unsalted butter
  • 1 tablespoon red wine
  • 1 teaspoon pure vanilla extract
  • 0.25 teaspoon ground ginger
  • 2 large eggs
  • 1 large egg yolk
Instructions:
  • Preheat the oven to 425 degrees F (220 degrees C) and grease two 6-ounce ramekins.
  • Melt chocolate in a double boiler over simmering water, stirring often and scraping the sides with a rubber spatula to prevent scorching, until smooth, approximately 5 minutes.
  • Take off the heat and delicately mix in wine and vanilla. Gently incorporate powdered sugar and ginger until a smooth mixture forms. Let it cool for approximately 5 minutes.
  • Combine the eggs and egg yolk and then pour the mixture into the prepared ramekins.
  • After baking in the preheated oven for about 10 minutes, remove and allow to rest for 1 minute. Run a knife around the edges, then flip each ramekin onto a plate. Serve immediately.
