Flourless chocolate cake

Indulge guilt-free with this delicious flourless chocolate cake, perfect for any day of the week!
Ingredients:
Meltedreduced-fat dairy spread, to grease
50g (1/2 cup) cocoa powder
80ml (1/3 cup) hot water
2 tsp instant coffee powder
10.00 gm boiling water
1 x 100g pkt almond meal
100g (1/2 cup) caster sugar
3eggs, separated
Strawberries, washed, sliced, to serve
Instructions:
Preheat your oven to 180°C. Brush a 22cm round cake pan with melted dairy spread to lightly grease, then line the base with non-stick baking paper.
Mix cocoa powder with hot water in a medium bowl. Stir instant coffee powder into boiling water in a cup, then add it to the cocoa mixture and stir until well combined.
Combine almond meal, sugar, and egg yolks with the cocoa mixture, stirring until fully incorporated.
Whip egg whites with an electric beater until soft peaks form. Gently fold a spoonful of egg whites into cocoa mixture, then fold in the rest until just combined.
Transfer the mixture into the prepared pan and place the cake pan in a roasting pan. Fill the roasting pan with boiling water until it reaches two-thirds of the way up the side of the cake pan. Bake in the preheated oven for 40 minutes or until a skewer inserted into the center of the cake comes out clean. Once baked, remove the cake from the oven and take the cake pan out of the water bath. Allow it to cool for 20 minutes, then turn the cake onto a wire rack, remove the paper, and let it cool to room temperature for another 20 minutes.
Slice cake into elegant wedges and delicately place on serving plates. Accompany with fresh strawberries for a delightful presentation.
