Ingredients:
  • 200g butter, chopped
  • 250g dark chocolate, chopped
  • 4 eggs, separated
  • 215.00 gm caster sugar
Instructions:
  • Preheat your oven to 160°C/140°C fan-forced, then prepare a 6cm-deep, 22cm round springform cake pan by greasing it and lining the base and sides with baking paper.
  • In a heatproof bowl, combine butter and chocolate, then place it over a pot of simmering water, ensuring the bowl doesn't touch the water. Stir gently until smooth.
  • Beat egg yolks and 1/2 cup of sugar in an electric mixer until thick and creamy, about 5 minutes. In a separate bowl, beat egg whites until soft peaks form, then gradually beat in the remaining sugar until dissolved.
  • Combine the chocolate mixture with the egg yolk mixture, blend well. Add one-quarter of the egg white mixture and mix thoroughly. Gently fold in the remaining egg white mixture. Pour into the prepared pan and bake for 50 minutes or until the top is firm to touch and a skewer inserted into the center comes out with moist crumbs. Allow the cake to cool in the pan before serving.
