Deliciously moist date nut bread, a modern twist on classic figgy pudding. Rich in dates, subtly sweet with no spices.
Ingredients:
  • 2.5 cups chopped dates
  • 0.25 cup butter
  • 1 cup boiling water
  • 0.5 cup packed brown sugar
  • 1 large egg
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 cup chopped walnuts
Instructions:
  • Preheat the oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
  • Combine sweet and sticky dates with rich and creamy butter in a bowl. Drizzle with hot water and allow the magic to happen until it cools down.
  • Combine the cooled date mixture with brown sugar and egg, stirring until the mixture is smooth and well combined.
  • In a bowl, mix together flour, baking soda, baking powder, and salt. Blend flour mixture into date mixture until just combined. Fold in walnuts, then transfer batter to the prepared pan.
  • Bake in the oven until a wooden pick comes out clean, for about 50 minutes.
