Moist date muffins with reduced sugar, simple to prepare.
Ingredients:
  • 1.5 cups all-purpose flour
  • 0.25 cup white sugar
  • 0.75 teaspoon baking powder
  • 0.125 teaspoon baking soda
  • 0.5 cup pitted and chopped dates
  • 1 cup buttermilk, at room temperature
  • 1 egg, at room temperature
  • 2 tablespoons butter, melted
Instructions:
  • Preheat the oven to 400°F (200°C) and prepare a 10-cup muffin tin by greasing or lining it.
  • Combine flour, sugar, baking powder, salt, and baking soda in a bowl. Gently sprinkle dates over the dry ingredients, ensuring they are separated. Stir well to coat evenly.
  • Combine buttermilk, egg, and butter in a small bowl and whisk together. Gently fold the buttermilk mixture into the flour mixture until just combined.
  • Fill the muffin tin with batter using a spoon.
  • Bake until a toothpick inserted in the largest muffin comes out clean, approximately 15 minutes in the preheated oven.
