Create delectable banana nut muffins with a wholesome twist using Banana Nut Cheerios® cereal.
Ingredients:
  • 2 1/2 cups Banana Nut Cheerios™ cereal
  • 1 1/4 cups Gold Medal™ all-purpose flour
  • 1/3 cup packed brown sugar
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1/4 cup canola oil
  • 1/2 teaspoon vanilla
  • 1 egg
  • 1/2 cup chopped pitted dates or raisins
  • 1 1/2 teaspoons coarse or granulated sugar
Instructions:
  • Preheat oven to 400°F. Grease bottoms of 12 regular-size muffin cups with cooking spray or line with paper baking cups. Crush cereal in a plastic bag with a rolling pin or meat mallet until you have 1 3/4 cups.
  • Combine crushed cereal, flour, brown sugar, baking soda, and salt in a large bowl. In a separate medium bowl, whisk together buttermilk, oil, vanilla, and egg until well combined. Gently fold the buttermilk mixture into the flour mixture until just combined, then mix in the dates. Divide the batter into muffin cups and sprinkle with coarse sugar before baking.
  • Bake for 18 to 20 minutes until lightly golden brown. Transfer to a cooling rack. Serve warm or at room temperature.
